Breakfast
Sucuk and eggs (sucuklu yumurta)
The weekend breakfast pan in most Turkish homes. Sucuk browns in a little butter, the eggs cook in its spiced fat, and you eat it straight from the pan with bread.

Ingredients
- 120 g sucuk, sliced into 5 mm rounds
- 1 tsp butter
- 4 eggs
- Pepper flakes (pul biber), to finish
- Bread and tea, to serve
Method
Warm a small pan over medium heat and melt the butter.
Lay in the sucuk slices. Cook for about a minute on each side, until the edges curl and the fat starts to run.
Crack the eggs into the gaps between the slices. Cover and cook for 3 to 4 minutes, until the whites are set and the yolks are still soft.
Scatter over a pinch of pepper flakes and take the pan to the table.
