How to brew Turkish tea in a çaydanlık
Turkish tea is brewed strong in the top pot and thinned with hot water in the glass, so everyone can choose how dark they drink it.

What you need
- A çaydanlık (double teapot) or a small teapot set over a kettle
- Turkish black tea, such as Çaykur Rize or Altınbaş
- Tulip-shaped tea glasses
Brewing
Fill the bottom pot with water and put 2 to 3 heaped tablespoons of tea in the top pot for four to six glasses. Bring the water to the boil, then pour a little of it over the leaves and turn the heat down low. Let the tea brew for about 15 minutes. The leaves should sink before you pour.
Serving
Pour the brew a third of the way up the glass and top up with hot water from the bottom pot. Less water gives a dark "koyu" glass, more water a light "açık" one. Keep the bottom pot on a low heat so you can refill through the meal.
Keeping tea fresh
Store loose tea in a closed tin or jar away from light, heat and strong smells. Check the date on the pack and use it before then.
